Quinoa pancake with mushrooms

Ideal to accompany white meats and fish, quinoa pancakes with mushrooms.

Ingredients for 4 persons :

  • 250 g of quinoa
  • 50 g of mushrooms (trumpets, shitakes, etc.)
  • 40g butter
  • 1 egg
  • 1 tsp. tablespoons of aromatic herbs (parsley, chive, etc.)
  • 2 tbsp. oat bran
  • 1 Pear
  • 5 cl of liquid cream
  • 50 g Emmental
  • 1 dash of sunflower oil
  • Salt, freshly ground pepper

Quinoa pancakes with mushrooms

- In a pot of salted boiling water, pour the quinoa and cook for 10 minutes at a low boil. Stop cooking and cover for 5 minutes. Drain and set aside in a salad bowl.

- Slice the mushrooms and cook them in 20 g of butter.

- In a salad bowl, place the whole egg, the aromatic herbs, salt and pepper. Beat together, incorporating the oat bran and liquid cream.

- Add the Emmental, cut into small slices, to the quinoa.

- Pour the appliance into the cheese quinoa bowl. Mix all of the preparation well. Adjust seasoning.

- In a large pan, heat the remaining butter and oil over low heat.

Pour in the preparation of the patties using a small ladle. Cook for about 1 to 2 minutes on each side.

- Serve with a seasonal salad.

Quinoa : Originally from South America, this plant was cultivated by the Incas over 5,000 years ago. Called "chisiya mama" (mother of all grains in Quechua), it was part of the food base of pre-Columbian peoples, like potatoes or corn. Similar to cereals, quinoa actually belongs to the same family as beets or spinach.
