As an accompaniment to pancakes and other sweets, fish and even smoked cold meats, tonka bean and almond butter surprises as much as it delights the taste buds.
Ingredients for 4 persons :
- 100 g unsalted butter
- 1 tonka bean
- 70 g ground almonds
- 1 tbsp. coffee of pastis
Tonka bean and almond butter recipe
- Take the butter out of the refrigerator 1 hour before using it.
- Make small shavings of the tonka bean.
- In a bowl, work the butter with a fork until it takes on the consistency of an ointment.
- Stir in the almond powder, tonka bean and softened butter pastis. Mix until you get a smooth texture.
- Place the mixed butter on a sheet of cling film and shape into a roll, taking care to close the two ends.
- Place in the fridge for 1 hour to 1 hour 30 minutes (or 15 minutes in the freezer).

manufacture (pasteurized butter, for example), their fat content, their origins (AOC butters) or their technique
For your recipes, you can use: unsalted unsalted butter, semi-salted butter with a salt content between 0.8 and 3% salt or salted butter with more than 3% salt.
